If you’re in the Naperville area, Wallace Farms (grass fed meat from Iowa) has a shop open to the public. You can pre-order by email, or take your chances and show up to buy what is available on a given day. The buying club is free, and Nick Wallace will email you each week to remind you to put your order in and let you know what is happening. We have had the lamb shanks, which were excellent. Peppered bacon was awesome – great BLT! We also tried nitrite free hot dogs and they were very good. They usually have a variety of cuts: chicken, beef, lamb, pork, and sometimes wild caught salmon, too. Click on the Wallace Farms link in the list at right to learn more. The shop hours vary, so check before you make the drive.
